I am tired of finding celery that has gone bad at the bottom of my crisper drawer!
Celery is a critical ingredient in many of my recipes, but I never seem to use it all before it spoils.
I decided to wash and cut some of it up right away for us to nibble on whenever we get the hankering. But what to do with the extra celery I'm not using right now?
I got to wondering if it could be frozen. And to my delight it can be frozen.

Not only did I have a lot of celery, but these bunches were really leafy. I couldn't bring myself to throw the leaves away so I thought I would try freezing them in a cigar shape like it says to do on the above website.

The website wasn't really clear on how exactly to do this...and rolling them into a cigar shape before they were in the bag proved to be more difficult that one would think.
So I improvised! I left the leaves a little damp so they would hold together better. I hope I don't regret doing that.
I shoved them all to the bottom of a freezer bag, shook and pressed them down good, then sealed the bag.

I made sure all of the air was out of the bag, then rolled it up.
Placing two rubber bands on the roll of celery leaves keeps it in shape.
After that I dated and labeled it, and tossed it in the freezer.
In theory I should be able to open up the bag and have a roll of celery leaves.
